In a beautiful little valley in the shadows of the Monti Sibillini lies the elegant, ancient Convento Acqua Premula hotel with its spectacular grounds, bubbling springs and the wonderful Restaurant La Foresteria. Just north of the town of Norcia (with its rich culinary history based on their DOP Prosciutto and Cingiale Salumi), you can feel the tension dissolve from your shoulders as you enter the long meandering driveway through the forest …and then the hotel emerges from the woods. The deluxe room we had was spacious and comfortable. We were greeted in the parking lot by the most welcoming, warm fellow (shame on us for not getting his name, as he was the most excellent host we have had the pleasure to meet)….and escorted to our beautiful room a short walk across the ancient cloister of the former convent. Peace and tranquillity ooze from the ancient walls of this place…and sipping excellent wines while munching on a selection of munchies (Pistachios, chips, nuts and fresh olives) outdoors under the shade of huge trees is an excellent way to forget the urgencies of travel. The Maître d’Hotel (previously mentioned - damn, I wish we got his name!) was an exceptional host, covering the several occupied tables with elegance and ease, while making excellent recommendations on dinner and wine paring.
