It didn’t take very long for us to form a lasting impression of this place. Arriving after dark on a Friday evening and parking in the ample parking space adjacent to the entrance, we are warmly greeted by Daniele, who took care of every single detail of our short stay. After a refreshing shower, we made our way to the restaurant, beautifully appointed and with an open kitchen for us to view what was going on. As usual, the menu was supplemented by daily specials, and we dipped in and out of both, ending up tasting at least seven different dishes all prepared and served single-handedly by Daniele. They rear the famous Suino Nero on the premises, something we were lucky enough to experience firsthand the following morning. Their hams, salamis and lardo made excellent accompaniments to both our dinner as well as breakfast, and the attention to detail lavished on the dishes is evident everywhere else you look around. Their home-made wine and olive oil hold their own out against some of the very best in the region, and are hundred percent organic, of course. After a restful sleep, we had a stroll around the entire property, walking past the scattered suites, 10 in all and eventually arrived at the pool area, set on raised ground with beautiful views of the surrounding olive groves in the countryside. A very short visit, unfortunately, but enough for us to decide this is a place that we will want to come back to. This especially after meeting the lovely owners, Paolo and Graziella, and realising how much love these two wonderful people have put into setting up Domus Hyblaea
